Which plane would you bet on to win a dogfight? the Spitfire or the Hellcat?

Depends on the pilot and tactics.. the hellfire is a lot more rugged and probably has a better dive and roll rate than the spitfire.. but the spitfire has the advantage in firepower and speed. The inline water cooled engine would be the spitfires Achilles heel.
